Cook Jose Olaez and assistant manager Pat O’Connor first started working together in Chicago 10 years ago.

Jose Olaez, of the White Elephant Pub, started on his cooking career path by accident when he was a young boy growing up in a town near Guadalajara, Mexico.

“I have six sisters and five brothers,” he said. “When I was a young boy, I got this virus and they had to keep me home. My mom, she taught me how to cook.”
